CAULIFLOWER MAC & CHEESE
Half a head of a med-lg cauliflower. diced 1/2 pound of Bacon, (cut a pound right down the middle) 1/2 med onion diced 1/2 red bell pepper diced (optional) 1 jar Ragu cheese 1lb sharp cheddar. diced.
In large skillet (big enough to hold all the cauliflower) cut bacon in pieces and fry on med heat until almost crispy. Add onions & red bell pepper. When onions look translucent, add cauliflower. cook until med-soft, but not mushy. stirring often. (you can speed it up by adding a forth cup of water and lid on it) When cauliflower is ready, turn off heat & add Ragu cheese & diced cheese. mix. Transfer into a sprayed with oil baking dish. Cook in oven 325 for 30 mins. Take out and let sit for 10 minutes, serve.
Makes enough for 4 people but if used as a side dish, double that. Serves well with salad or as a side with any combination of foods.
If you have leftovers... You can add chopped smoked sausage & a can of tomatoes & heat in oven for 30 minutes for another meal.
