Cauliflower & Red Bell Pepper Cheese Soup
1 frozen package of rice cauliflower 1/2 red bell pepper 1 sm onion 1 carton chicken broth 1 8 oz pkg of cream cheese 1/3 cup whipping cream 1/2 10 oz hunk sharp cheddar cheese. 3 T butter
saute' in butter cauliflower, red pepper & onion.
When warm & pepper soften add 1/2 of chicken broth & bring to a boil.
add in chunks of cream cheese. stir until creamy
stir in cream
add cheddar in small square pieces. stir until melted & blended.
(at any time during the whole process you feel it is too thick add more chicken broth to suit your desired creaminess)
let simmer for 10 minutes on med-low heat stirring often.
let set off heat for 5 minutes and then serve.
