1/2 c bits and pieces Pecans 1 c diced small English Cucumber 1 c diced small Roma Tomato 1 c diced small Red Bell Pepper (Yellow or Orange) 1 c fresh parsley (processer chopped) 1/2 c fresh mint (processer chopped) 1/2 c diced fine White onion (or processer) 2-3 garlic cloves pressed (or diced fine) 1 tsp Sea salt or Himalayan pink salt
3-4 Tbsp Lemon juice (or lime, or 2 of each [my favorite choice]) 1/3 c extra-virgin) olive oil
Mix the top 9 ingredients together. Mix the last 2 ingredients and pour over the rest toss again. Chill for a couple hours and serve
Tips: a. If you have to mix dry mint or parsley with some fresh it will work too b. You can use any of your choice of onions or omit if you are not an onion fan c. You can use less cloves, your choice
Make the recipe your own and enjoy. makes about 4 light cups for a 4 serving meal or eat 1/3 of them for 2 people saving 1 small bowl for later. will hold up in fridge for 3 days.
Try serving with salmon and a side of stuffed eggs.
