It is not the Holiday Pumpkin Pie which we have all learned to love. However, it is a choice to eat a pumpkin dessert to feel like we are not totally deprived. I put this together and found it to be suitable for us. If you can give up the crust. If not I know there are some flourless crust out there on the internet. I kept tract of the calories and carbohydrates with this one so you will know after your Thanksgiving day meal, where we are bound to stretch our limits a tad.
NOT DEPRIVED PUMPKIN DESSERT
I used a 7x12 pan. Total calories 796, carbs 8.6. I did the math for 8 pieces you can chose smaller ones & cut these. 1/8 of the dessert is 95 cals. & 8.6 carbs.
Mix together
1/2 of 300z carton of Ricotta Cheese
1/2 small can of Pure pumkin
1 large egg
1/2 tsp nutmeg
1/2 tsp cinnamon
1/4 tsp ginger
1/4 tsp mace
2 tsp monk fruit blend (erythritol & monk fruit) or your favorite sweetener adjust measures accordingly
2/10 tsp of stevia ( I use the tiny stevia scoop which is 1/10th tsp)
after all is blended, add :
3 TBS of whipping cream (not whipped, in carton)
Mix well.
Pour into a oil spray backing dish
Top with 1/4 chopped pecans ( i chopped the bag of chopped pecans a little smaller)
Bake at 325 for 35 mins. reduce heat to 300 and bake for 15-20 more. until knife comes out clean.
NOTE: i do not like my stuff too sweet. so you may want to up the sweetener for your own taste.
Serve today or refrigerate and serve later. w/ homemade whipping cream. (I sweeten mine with monk fruit & vanilla. 1cup whipping cream in carton whips up real good with 1 tsp vanilla & preferred sweetener) You must add calories for this addition, but no carbs.
