SHEPHERDS CAULILOWER PIE
Mashed cauliflower
1 lb ground beef
1/2 cup diced Celery
1/2 cup diced Onion
1 Tbsp jar Garlic (or equivalent in dry or fresh)
1 eight oz. package of sliced mushroom (more or less to your liking)
1 cup beef stock or broth.
Salt & Pepper to taste
cornstarch/ arrowroot or any thickener.
Mash cauliflower and set aside. (see ingredients & direction at bottom of page)
Sauté Celery, Onion & Garlic.
Add Ground Beef and stir until browned.
Add Beef Broth and simmer 10 minutes.
Add thickener as much as needed to make a gravy consistency. S&P
Pour into a oil sprayed casserole dish or pan.
Top with Mashed Cauliflower.
Bake in a preheated oven of 400 for 15-20m minutes until top is browned.
If using glass dish do not heat oven over 350 and cook longer.
Divided into portions of 4 servings, at 13 carbs each serving & 98 calories. Use as a Main Corse meal with a low carb side to keep carbs low.
MASHED CAULIFLOWER
1 head Cauliflower
3 Tbsp Butter
2 Tbsp Cream or Sour Cream (I used Sour Cream for this recipe but use regular when just cooking mashed Cauliflower as a side)
1/2 cup Parmesan Or Romano shredded cheese
S&P to taste
Chop Cauliflower, cook in water until soft. drain. add butter mash, add sour cream mash, add parmesan cheese Mash, s& P. Set aside for this recipe or serve with another dinner.
My husband loved this Shepherds Pie version. and informed me I could do this again. He also likes the mashed cauliflower side dish.
Side tip : if you do not have to sustain from potatoes, feel free to make a mix of half cauliflower & half potatoes, boil and proceed as directed for side dish or Shepherds Pie recipe.
