I know this does not go along with my new way of eating but with Jim home 24/7 and not being able to get to stores regularly for bread this may come in handy
I also stumbled on a internet simple yeast making. not sour dough per say but a way to make it right off and keep yourself in yeast for baking projects.
3 Tbsp Flour
2 Tbsp water
stir a few times in the 1st 24 hrs
Feed it the same amounts daily stir only once or twice
Do this until you get the amounts you want to work with. It should begin to get bubbly.
If you later put it in fridge you can feed it only once a week, if you keep it on the counter you have to feed it daily feed.
If liquid forms on the top, it is common and just pour it off & continue.
Look at sour dough recipes online to know the amount of yeast needed. and use accordingly.
