Summer Squash Salad
Ingredients
2 medium yellow squash, make into zoodles and sizer cut into shorter stripes or use a julian shredder
3 tablespoons red onion diced as small as you can do it.
1 tsp dried cilantro
6 green stuffed olives diced same size as onion
2 rounded spoonsful of diced green chilies (mild -med)
1 teaspoon salt
1 tablespoon olive oil
2 teaspoons fresh lemon juice
½ teaspoon freshly ground black pepper
¼ cup crumbled shred parmesan cheese
Directions
Toss yellow squash all in a large bowl. Add all ingredients & toss. Let sit for 15 min (or more) to moist cilantro. Serve
