i will add more than one meal to this thread of dinners and not separated them but they will all pertain to cheap easy meals.My Mom's easy po'boy meatball dinner. Feeds about 4. its quick and inexpensive.
Po'boy Hamburger Meatballs
a pound of hamburger. 2 pieces of bread small onion 1 egg 1 can cream of mushroom soup 1/2 can of milk.
Break hamburger apart in a bowl, tare up the bread, and add, chop the onion; add, then add egg. Mix well together, shape into meatballs, you choose size from 2 inch to 4 inch. Brown in oiled fried pan over med heat. When all sizes are brown add 1 can cream of mushroom soup into the pan. Mix 2/3 of milk in can. and then stir. Simmer for a short time coating the meat balls, when soup looks creamy like gravy its ready to serve or set on warm stirring occasionally while everything else it geting ready.
Serve with boiled or mashed potatoes and a vegetable.

Lazy Cook Unstuffed Cabbage
1 tube of ground meat (turkey, chicken or hamburger + 1 lb.) 1 - 2 cups precooked rice 1 small onion, diced 1/2 stick butter Oil on the side if more is needed. 1 small head of cabbage (can use a med one or even larger if you up the tomatoes.) dice, shred or how ever you like it chopped:) 2 cans diced tomatoes, or spaghetti sauce or combination Italian seasonings or any herbs you have as favorites for tomato dishes. Parmesan cheese (optional)
DIRECTIONS brown ground meat in fry pan, set aside
On med heat. melt butter in large fry pan. sauté onions, add cooked rice if any more oil is needed fell free to add. mix well. add browned meat. stir, add cabbage. cover while steaming. stir often. add about 1/2 cup water if needed to help with cooking the cabbage. (should only take 10 minutes to steam the cabbage. may need another 1/2 cup water for larger quantities.
in a sauce pan heat the tomato sauce together. add favorite spices.
Serve cabbage & rice in low rimmed bowl , top with sauce and parmesan if desired.
OPTION : add tomato sauce to cabbage and rice and heat together stir as you feel lead. then serve.

Meal Over Biscuits
tuna fish, heat with mushroom soup, 1 tube biscuits,
put in a pan and top with tuna and mushroom soup bake as directed on biscuits.
Optional: add a veggie like peas add more mushrooms bell peppers try a can of Chicken and cream of celery soup or Hamberger and mushroom soup
Serve with a side of anything. I made these for my children back when finances were stretched. Though it may help some people today if they are struggling

CABBAGE FRY 1/2 cabbage diced. cut up (Optional for larger families use the whole cabbage) 1/2 to 1 whole Package of ring style smoked sausage. slice dice to 1-inch - 2-inch pieces (Optional Beef sausage, Turkey sausage, Kielbasa sausage) 1/2 onion diced (optional) 1-2 t dill 2 T oil of your choice
In a large skillet or pan over med heat. sauté the diced sausage in the oil, for 5 mins, stirring often. Add onion stir another 5 min, then add cabbage. Stir as needed. if you want it quicker put lid on.
add optional ingredients . potatoes diced (if use start in the pan with this ingredient so it cooks) red or green pepper minced or powdered garlic.

Sauerkraut for Dinner
16 0z sauerkraut 12 potatoes diced and sautéed in 2 T oil Onion sauté in 2T butter (set aside) 2 T Butter melted then with mixed 2 T oil (set aside) 2T Dill 1T Caraway seed (optional) Meat of choice: sausage, smoked sausage, shred pork, diced ham 1/2 cup flour
In Large Pan Fry Potatoes until almost cooked Add sauerkraut with juice heat Should be watery (if not add 1-2 cup water) add onions sauté in butter. ad dill and caraway add meat Heat
Make a roue of the butter oil and flour. add to the pot and thicken as you like.

Hotdogs and Beans
package of hotdogs sliced. 2 cans of pork & beans 1 Tbsp mustard 1 Tbsp Ketchup 1/2 onion 1 tsp chili powder 2 T butter loaf of bread
Sauté onions in butter until caramelized on med heat. add hotdogs, 2 minutes stir, Add the beans, mustard , ketchup, chili powder. simmer until thickened. May want to turn the heat down .
Serve over a piece of bread.
Serve with a side of applesauce or cottage cheese.
optional add a sm. can of green chilies.
Another dinner when times were stretched to the max. Kids loved it.

Potatoes Stir Fry
3-4 potatoes diced and sautéed in oil of your choice on med heat. Add 1/2 onion, 1/2 red pepper, cook til onions caramelize Add meat of your choice, Diced ham, Hamburger, Diced Smoked sausage, Diced Sausage links, 1 T Basil or Rosemary Salt & Pepper
Serve with a veggie of your choice.

Mackerel patties
a can of mackerel 1'2 cup flour 2 tsp baking powder 1 egg 1/2 onion (optional) Oil of choice for frying
clean the bones and skin off mackerel, Mash cleaned Mackerel in med bowl with a fork Add & mix well together. flour, egg, baking powder, onion If too dry, add a bit of milk or water to make pasty for a patty.
Spoon on medium heated oiled pan. turn when browned. Serve with your choice of veggies for the meal
OPTIONS Replace mackerel with lg can tuna or canned chicken. Can add spices like Basil or Italian spices or whatever your choices of spices are.
Try a mixed blend of your favorite. I have a Greek mixed blend that works well.

Spicy tomato soup
1 can of tomato soup
1 can of hot spiced diced tomatoes
Blend together no need for water. heat. serve with any type of sandwich or a cheesy tortilla.
This was a out of the box thought for grilled cheese and tomato soup which is still a favorite option.

SALADS: look at the Hamberger Salad in the regular thread. in the summer people give you fresh vegetables and you can turn them into a dinner salad and toss some browned Hamberger on the top. The recipe shows many variations. and you can add your favorites. have fun Salad Lovers

Baked Potatoes
Bake a White Potatoe
Meal 1: Top w/ left over chili, shred cheese and sour cream
Meal 2: top w/ butter, sour cream, bacon, green onion tops <optional, serve w/ some green veggie
Meal 3: top w/ browned sausage white *gravy, red diced peppers, shred cheese. serve w/stuffed eggs
Meal 4: top with can chicken made into a *gravy w/ saute' in butter, celery, bell pepper (red or green) & onions. Serve w/ side of corn. (optional: in place of chicken use can beef, diced ham,
* gravy: make with a flour rue (mix flour with any oil or butter until pasty then add to the mix in frypan using milk or water to turn it into a gravy)
Do i have your ideas floating. You can use anything on top that Potatoe you like.

Baked Sweet Potaoes
Bake a Sweet Potatoe
Meal 1: top it w/ butter, sour cream, s&p
Meal 2: top it w/sautéed' diced spinach, feta, bacon pieces
Meal 3: top it w/ butter, cinnamon, applesauce. & a dabble of Greek yogurt (or any your choice)
Meal 4: top with butter & yogurt, and handful of walnuts or trail mix, serve w/ coleslaw.
Sides: sauteed mushrooms in butter, green beans with a tsp of bacon dripping's, corn w/ diced red pepper, Mix black beans & corn w/ red pepper & onion or 1/2 of a sm. can of green chilis, diced cabbage and shred carrots, sauteed fresh green beans w/ carrots cut in half length ways and then slice on an angle thin. Any type of greens you like,
sides can be use with other meal plans. get creative

Chicken & Rice (my MIL recipe)
1 1/2 # skinless chicken (your choice, legs work good for children) 1 can cream of chicken soup 2/3 c uncooked rice 1 1/3 c water or half it with milk spray oil preheat oven to 375 F
spray a baking dish with spray oil (11x8x2) put in rice and spread it around lay chicken on it mix soup with water and pour it over the chicken and rice
Cook for 25 mins covered w/ tinfoil, 20 mins uncovered & leave stand for 5 or 10 before serving
options: Cream of celery w/ added 2 diced celery stalks
Cream of mushroom w/ 1 C diced mushrooms & 1/4 C diced green bell pepper, 1/4 C diced onions & 1 garlic clove minced
Cream of tomato w/ 1 tsp chili powder, 1/2 sm. can green chilies, 1 can chili beans. add 15 minutes to uncovered cook time. When out of oven resting, sprinkle 2/3 c shred cheddar cheese and tent the tinfoil over it to melt for the 5-10 mins.
